Who doesn't love tacos?
Who doesn't love running to the store to get tortillas when you have a taco craving? Me. But I've done it because sometimes THE TACO THIRST IS REAL.
Buuuuut no more because hello, tortillas are the easiest things in the world to make. You literally need four things and your hands, and I'm like 98.9% sure you already have what you need in your pantry.
This will make you 8 tortillas; double or half it depending on how many mouths you've got to feed, or how many tacos you want to slam while you're catching up on whatever brain-sucking Netflix show you're binging on.
What you'll need:
- 2 cups whole wheat flour
- 3 tbsp. olive oil
- sea salt
- water
These are all pretty standard things to have in any kitchen and I'm totally not judging you for not having them but, uh, get them now.
What to do:
- Mix your flour, olive oil and a sprinkle of sea salt together in a mixing bowl. Add one cup of water. (If you're making more or less, keep the ratio of flour to water 2:1.) Knead it with your hands til it's firm and fun to play with.
- MAKE DOUGH BALLS. Yep, just like you did in the Vegan No Bake Peanut Butter, Chocolate & Coconut Power Bites recipe I posted the other day.
- Flatten those suckers out. This is a great stress reliever. SLAP THEM HARD.
- Heat up a skillet. Put some coconut oil (or whatever you've got) in the pan once it's hot. Add your tortillas and let 'em fry for a couple minutes on each side. (I've told you guys before DO NOT heat up your pan WITH your oil in it or your food will taste like shit. Hot pan, then oil, then tortillas.)

Then just add whatever toppings you have. I used Trader Joe's Soy Chorizo after Megan introduced me to it and holy crap, it's good. I also added some black beans, some adobo spice, shredded lettuce, tomato and avocado, but you know, you do you.
Feast.
