I'm not interested in this "brunch" thing that's all the hype these days. Seriously. Get the afternoon food away from me and leave me alone with my toast.
What I mean to say is hi my name is Ashlee and I love breakfast food. Breakfast is awesome because:
1. It's usually paired with fresh coffee or a killer bloody mary (ideally, both);
2. It gives you the energy you need to be a BOSS and take the day by the horns;
3. You can still be in your pajamas while you're eating it. You could say the same about lunch and dinner but um, ew, PLEASE DO SOMETHING WITH YOUR LIFE;
4. There's almost no breakfast food combinations that can be considered gross (I say "almost" as a disclaimer because I've only spent like 10 seconds thinking about the possible breakfast combinations so I'm sure there's something like oatmeal on waffles but even that sounds pretty decent with maybe some blueberries and bananas or something...)
...anyway, eating clean without harming animals or the earth doesn't mean you can't still have a satisfying breakfast!
These sausage patties are the BOMB. Way better than that prepackaged, processed and expensive junk from the frozen aisle of your supermarket.
What you'll need:

- 1/2 cup TVP*
- 1/2 cup whole wheat flour
- 1/4 cup oat bran
- 1 tbsp. nutritional yeast**
- 1 tbsp. ground flax seeds
- 1 tsp. garlic powder
- 1/2 tsp. rubbed sage
- 1/2 tsp. black pepper
- natural sea salt, dash
- cayenne, dash
- 1/2 tsp. liquid smoke***
- 3 tbsp. soy sauce
- 1 tsp. maple or agave syrup
- 1/4 tsp. molasses
*aka textured vegetable protein. I use Bob's Red Mill TVP. You can find it at most well-stocked grocery stores with a natural/health aisle. This stuff will change your vegan ballgame. You can make so much with it, including a shepherd's pie that's to die for.
**aka nooch. I don't know why this is the nickname, because it sounds disgusting. Nutritional yeast can be found in the bulk section of the grocery store and has a cheesy, savory taste. It's wonderful, especially on popcorn. You should probably buy a lot, even though this recipe only calls for a bit.
***It's probably in your spice aisle or near the bbq sauce. It's a game changer too. Veggie chili, anyone?
What to do:
1. Put your TVP in a mixing bowl with 1/2 cup of boiling water. Let that sit for five minutes, or until it looks like most of the water has been absorbed.
2. Add your flour, oat bran, spices, nutritional yeast and your flax seeds. Stir it all up.

4. Mix in the soy sauce, maple syrup and molasses (aka the holy trinity of sausage flavor)
5. Form all of that granola-beef-slightly-nasty looking stuff into little patties with your hands. You don't have to measure it out, but a half tablespoon to a tablespoon of the stuff should get you a decent sized patty. This recipe will make about 10 patties, so if you have a lot more or a lot less you probably did it wrong, but it's okay because it'll taste the same and you'll either just starve or be so full you'll have to put on sweatpants if you aren't already in them.
6. Heat up a frying pan, and then add some oil because you're about to fry the hell out of these sausages and you don't want them to stick. It's important to heat up the pan before you add the oil because different oils have different burning points. Regardless of what kind you're cooking with, it's always better to do it this way to avoid a nasty turnout. Cook 'em for a couple minutes on each side and bam, you're done.
You can freeze these suckers in foil or tupperware, just make sure to lay them flat. Throw them in a skillet to heat them up when you want a savory side to your pancakes. I use them on a veggie skillet, but the options are endless. (Breakfast for dinner, anyone?)
